Moist and delicious orange cake made from scratch using whole oranges!

Author Cris Wang

  • 2 oranges peeled, quartered and seeded
  • 1 cup oil
  • 3 eggs
  • 2 cups flour (soft white, sifted to remove bran)*
  • 1 1/2 cups sugar (I used Sugar in the Raw)
  • 2 Tbsp baking powder
  • 1 cup favorite mix in*

  1. Preheat the oven to 350F. Prepare a bundt pan by coating with butter and flour.

  2. In a blender add the oranges (peeled, quartered and seeded), oil and eggs. Blend on high until uniform and homogeneous .

  3. In a large bowl add all the dry ingredients and mix with a whisk.

  4. Pour the blended mixture onto the dry ingredients and gently mix with a spatula until combined. DO NOT OVERMIX!

  5. Now you can add the mix in of your choice (up to a cup). I added dried cranberries.

  6. Pour the mixture in the pan and bake it for about 45 minutes or until golden brown and no longer wet when tested with a toothpick.

  7. Wait for the cake to cool before trying to plate it.

Recipe Notes

*You can use All Purpose flour.

*My favorite mix in are fresh cranberries. You can also use dried cranberries, raisins, dark chocolate chips, etc.
